Great Deals on Boneless Pork Sirloin! Canning Guide

I just picked up some boneless pork sirloin tips on sale at Lin's...buy one get one free. Check out the deals at Davis' as well...they often have a lot of variety of meats on sale. I'm pretty sure they'd be having similar deals at other stores. They come in either roasts or chops and you have to match them. Like with the chicken (that's still on sale) these would be great to freeze, freeze dry or bottle. Pay attention, among other things, to the elevation guides for pressure canners. Some have dials and some have the little weights. If you have the kind with a weight, which is the most common, use the 15 lb psi because we are over 1000 ft in elevation.

Again, we may not see these prices or anything like them for a looooong time. If you don't have room for bottles, try under beds (pints might work best there) or consolidate some pantry space.
